Pinot Noir from Oltrepò Pavese DOC
The fermentation, entrusted to spontaneous yeasts, is accompanied by several days of gentle punching down, to give slowness and gradualness to the replenishment of the yeasts.

The vines produce less than a kilo of grapes per plant, harvested exclusively by hand. The de-husking process also remains entirely manual, which preserves the integrity of the beans. As the racking process approaches, pressing by foot allows the grapes to be gradually broken up while still whole.

Pinot noir

The vineyards of Cigognola overlook the last orogenic thrusts of the Apennines of the Lombard-Ligurian-Emilian triangle.
Beyond these extremes of geology, the land in the direction of the thrust (from southwest to northeast) is flat up to the foothills of the Prealps, with a few exceptions.

Precisely on the steep slopes of Cigognola, the humours of the Pinot Noir nourished by the juices of the earth and combined with the heat of the sun (Purg. XXV) become wine with so much heart, head, hands and feet.
